A delicious dairy-free low fat pudding alternative.
- ¾ cup coconut milk (aseptic box variety)
- 2 ½ tablespoons chia seeds
- 1-2 tablespoons agave syrup, to taste (or stevia to taste)
- 2 tsp. cacao powder (can sub carob powder)
- ½ tsp. almond extract
- Dash salt
Mix all ingredients together. Taste for sweetness and adjust if needed. Refrigerate overnight. Pudding will thicken overnight, and be ready the next day. Serve with fresh raspberries if desired.
