Hemp Pesto

Pesto is traditionally made using pine nuts, however, many variations in ingredients are possible. A variety of nuts and seeds can be substituted for the pine nuts like walnuts, sunflower seeds and hemp seeds. In addition, a variety of greens can be substituted for the basil like kales and radish greens. If you even have garlic scapes popping up you can use these in place of the garlic.  You can really flavor pesto any way you want to fit any budget you want!

Using hemp seeds instead of pine nuts adds 3 additional grams of protein per 1/4 c

  • 2 c fresh basil leaves, loosely packed
  • 1/4 c hemp seeds
  • 1/4 c shredded parmesan
  • 3 Tbsp extra-virgin olive oil
  • 1 clove garlic
  • ¼ tsp salt

Add all of the ingredients in a blender or food processor and process until smooth, scrape down sides with a rubber spatula if necessary as you blend.

Serving Ideas
Use pesto as a dip for chips or vegetables, on top a pizza as the sauce, as a sandwich spread, on top a salad, or as a pasta sauce.
