1/2 c melted coconut oil
1/2 c almond or peanut butter
3/4 c coconut sugar
2 tsp vanilla extract
1/2 c hemp milk
2 1/4 c spelt flour
1 tsp baking soda
1/2 tsp cinnamon (optional)
1/2 c old-fashioned oats
1/4 c hemp seeds
1 c semi-sweet or other non-dairy chocolate chips
Preheat oven to 350 degrees Fahrenheit. Mix the coconut oil, nut butter, and sugar until well combined. Mix in the vanilla, and milk.
Add the flour, baking soda, and cinnamon and mix until dough forms. Stir in the oats, hemp seeds, and chocolate chips until well combined.
Drop by tablespoons onto ungreased cookie sheets and flatten slightly. Bake for 12 to 15 minutes until slightly browned.
Allow the cookies to cool on the baking sheets for 5 minutes. Then transfer to cooling racks, cool and enjoy!
