Vegan Tofu Burritos

Ingredients:

  • 1 lb firm tofu
  • 2 Tbsp canola oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1-1/2 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • black pepper, to taste
  • 3/4 c tomato sauce
  • 1 Tbsp fresh jalapeno pepper, minced
  • 2 medium tomatoes, diced
  • 2 c shredded lettuce
  • whole wheat tortillas, warmed
  • salsa

Directions:

Cut the tofu into ½ inch slices and blot dry on a clean tea towel.  In a large bowl, mash the tofu with a potato masher.

Heat oil in a large skillet and sauté onion, garlic, cumin, chili powder, oregano and black pepper, until onion is soft.  Add the tomato sauce, jalapeno pepper, and tofu and cook until heated through, about 5 minutes.

Assemble burritos with the tofu mixture, lettuce and tomatoes. Serve with salsa, and enjoy!
