Vegan, Gluten-Free, Raw
• 1 cup raw brazil nuts
• 1/4 c hemp seeds
• 1-1/4 c unsweetened shredded coconut, plus extra for rolling
• 1-1/2 Tbsp maca powder
• 14 dates, pits removed
• 2 Tbsp maple syrup
• 1 Tbsp vanilla extract
• Dash sea salt
• 1/2 tsp ground cardamom powder
Grind all ingredients together in food processor until everything is coarsely ground. The dough should stick together when pinched, but still be crumbly. If too dry, add water a half teaspoon at a time until the dough sticks.
Form dough into balls using about a tablespoon at a time. Roll in the extra coconut. Store in refrigerator; these will last for several weeks refrigerated.
