Banana Oat Bars

These Banana Oat Bars are the perfect balance of wholesome and indulgent—a cozy snack that doubles as dessert. Ripe bananas keep them soft and naturally sweet, while hearty oats add a chewy texture and a boost of whole-grain goodness. A sprinkle of chocolate chips melts into every bite, making them just the right mix of comforting and crave-worthy. Easy to whip up in one bowl and perfect for sharing, these bars are a go-to treat for lunchboxes, potlucks, or a quick afternoon pick-me-up.

Ingredients

  • 1/4 cup butter
  • 1/2 cups brown sugar
  • 1/2 cups white sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups bananas, mashed
  • 1 cup whole rolled oats
  • 3/4 cup all-purpose flour
  • 2 tsp baking powder
  • 1 cup semisweet chocolate chips

Directions

  1. Preheat the oven to 350 F. Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream the butter and white and brown sugars. Beat in the egg and vanilla extract. Fold in the mashed bananas.
  3. In a small bowl, mix together the flour, rolled oats and baking powder, then fold that into the wet mixture. Stir in the chocolate chips.
  4. Spread into the prepared pan and bake 25 minutes, until set. Cool before cutting into squares.
