Class: Spanish Tortillas

On a recent trip to Spain, Becky was able to immerse herself in the food culture, learning about Spanish techniques, ingredients, and flavors. The Spanish tortilla (or Spanish omelet) is a potato-and-egg dish served in almost every restaurant and bar and certainly in every home in Spain. It has become a staple in Becky’s house as an easy, but elegant, make-ahead dish. We will serve it with a homemade roasted garlic aioli and light salad. Perfect for an Easter brunch!
